Baked Seafood Rice

  • 400g long grain rice (washed and soak for 30minutes)
  • 650ml Maggi vegetable stock (3 cubes)
  • 250g prawns (shelled and deveined)
  • 200g calamari (cleaned and cut into triangles)
  • 300g clams (scubbed and washed)
  • 25g butter
  • 2 tbsp tomato paste
  • 100g tomato (chopped)
  • 100g red bell pepper
  • 1 red chilli (chopped)
  • 25g garlic (chopped)
  • 50g green zucchini
  • 2 tbsp parsley (chopped)
  • 4 tbsp dill leaves (chopped)
  • 50ml oil

Step 1

Heat oil in a saucepan, and saute onion, garlic, red chilli, bell-pepper and zucchini

Step 2

Add tomato paste and tomato; cook till vegetables turn light brown

Step 3

Add shrimp, calamari and clams and cook till shrimps turn light pink

Step 4

Add rice to saucepan with butter and mix till rice is coated

Step 5

Place the rice in a rice-cooker, add stock and cook

Step 6

Once cooked, fork rice to separate the grains and mix in parsley and dill

Step 7

Serve immediately.
