Heat oil in a saucepan over medium heat and saute the chicken till is brown; remove from heat
In the same pan saute onion, garlic, carrot, celery, mushroom, kidney beans and tomato
Add tomato paste and cook till the vegetables caramelize
Add the chicken and stock; bring to simmer
Simmer till beans are soft and sauce has thickened; correct seasoning and remove from heat
Garnish with parsley and serve with steamed rice or fresh bread
