Step 1

Begin by placing the whole chicken into a large soup pot. Add the halved carrots and onion. These vegetables infuse the broth with natural sweetness and richness while also providing added texture and nutrition. Pour in four cups of cold water, ensuring that the chicken and vegetables are fully submerged. Place the pot over medium heat and bring it to a gentle simmer. Allow the mixture to cook uncovered, so the broth can reduce and concentrate its flavour. Simmer until the chicken is tender and the meat begins to fall off the bones, which usually takes about 1 to 1.5 hours depending on the size of the chicken. During this time, skim off any foam or impurities that rise to the top to ensure a clear broth.

Step 2

Once the chicken is cooked through and the broth is rich, carefully remove the chicken, carrots, and onion from the pot. Set them aside to cool slightly. Strain the broth using a fine mesh sieve or cheesecloth to remove any unwanted particles, then return the clear liquid to the pot. When the chicken is cool enough to handle, separate the meat from the bones. Shred or chop the meat into bite-sized pieces. Slice the carrots and onions into smaller chunks if desired. Return the meat and vegetables to the pot with the strained broth. Season the soup with salt and freshly ground black pepper. Add one teaspoon of MAGGI Chicken Seasoning Cube, crumbled, and stir to dissolve. This adds an extra depth of savoury umami flavour that elevates the entire dish.

Step 3

Gently heat the soup again for a few minutes until everything is warmed through. Taste and adjust seasoning if needed. Once ready, serve hot in bowls. You can garnish with freshly chopped herbs like parsley or thyme for added aroma and freshness.
