Easy Black Pork Curry

  • 1 kg Low-fat boneless pork (cut into small bite sized cubes)
  • 3 large Onion - sliced
  • 5 nos Garlic - minced/paste
  • 2 inches Ginger - minced/paste
  • 2 sprig Curry leaves
  • 4 inches Rampe leaf
  • 1 stalk Lemongrass
  • 2 nos Green/red chili split down the middle
  • 2 tablespoon Chili powder
  • 1 tbsp Coriander powder
  • 1 tsp Cumin powder
  • 1 1/2 tsp Goraka paste
  • 2 tbsp Tamarind pulp
  • 2 nos Cloves
  • 3 nos Cardamom (cracked)
  • 1 nos Maggi vegetable seasoning cube
  • 1 tsp Jaggery powder/ sugar
  • 1 cup Water
  • 20 ml Sunflower oil (1 1/2 tbsp)

Step 1

In a frying pan or dry saucepan, brown the coriander powder, cumin powder and chili powder over a medium heat till it becomes dark and fragrant; set it aside to cool down.

Step 2

Mix the browned spices with the pork cubes, along with the Goraka paste and leave for at least an hour to marinate well (leave overnight for best results).

Step 3

Heat the oil in a saucepan or clay pot over a medium heat; once the oil is hot fry the onions, curry leaves, garlic, ginger, green chilli, Rampe and lemongrass till the onions are light brown in colour; add the marinated pork, tamarind, sugar, cloves, cardamoms, Maggi seasoning cube and water.

Step 4

Bring to boil and then reduce to a low heat; and simmer covered for 30 - 45 minutes till the pork is soft and tender (time may vary depending on the quantity and quality of pork)

Step 5

Serve with warm rice or fresh bread.
