Oil a muffin tin and set aide.
Preheat oven to 200°C.
Combine the eggs and milk in a bowl and season it with salt and pepper. Whisk.
Add the bell pepper, spinach leaves and shredded cheddar and whisk.
Fill muffin cups 3/4 full with the mixture and bake for 20-25 mins until the centers are set and no longer runny.
Allow to cool slightly before serving.
