Cook the rice a day before and refrigerate; or cook the rice and cool it down completely by spreading it on a large tray
Heat a wok on high heat; add 1tbsp of oil and scramble the eggs; add some salt, mix and set aside to be used later
Wipe the wok and place again on high heat; add rest of the oil
Add garlic, vegetables, salt, light soy sauce and mix well
Add the seasoning cube and mix well.
Add the scrambled eggs and mix well; add pepper to taste.
Add the cooked rice and spring onion, toss once and remove from the heat
Taste and correct seasoning (add more salt only if necessary, based on taste)
Sprinkle the sesame oil and toss once more to mix
Serve hot with chilli paste or a stir-fried side dish based on preference
