Egg Fried Rice

  • Serves : 4-5

  • 650 g cooked basmati rice (cooked and cooled)
  • 6 cloves garlic
  • 6 large eggs
  • 2 nos Maggi seasoning cube
  • 3 tsp sesame oil
  • 2 tbsp light soy sauce
  • 10 sprigs spring onion - chopped
  • 50 ml sunflower oil / corn oil
  • 1 tsp pepper (more to taste if necessary)
  • salt (to taste only after checking the seasoning)
  • 50 g carrots
  • 20 g sweet corn
  • 20 g green beans
  • 20 g bell pepper

Step 1

Cook the rice a day before and refrigerate; or cook the rice and cool it down completely by spreading it on a large tray

Step 2

Heat a wok on high heat; add 1tbsp of oil and scramble the eggs; add some salt, mix and set aside to be used later

Step 3

Wipe the wok and place again on high heat; add rest of the oil

Step 4

Add garlic, vegetables, salt, light soy sauce and mix well

Step 5

Add the seasoning cube and mix well.

Step 6

Add the scrambled eggs and mix well; add pepper to taste.

Step 7

Add the cooked rice and spring onion, toss once and remove from the heat

Step 8

Taste and correct seasoning (add more salt only if necessary, based on taste)

Step 9

Sprinkle the sesame oil and toss once more to mix

Step 10

Serve hot with chilli paste or a stir-fried side dish based on preference
