Vegetable Spring Roll

  • Serves : 20-25

  • 100 g Onion - sliced
  • 50 g Garlic - finely chopped
  • 200 g Carrot - thin strips
  • 150 g Leeks (green and white) - thin strips
  • 50 g Cabbage – thin strips
  • 50 g Beansprouts
  • 50 g Green onion - finely chopped
  • 1 nos Red chilli (more to taste) - finely chopped
  • 1 Packet Rasamusu
  • 1 tsp Sesame oil
  • 1 tbsp Dark soy sauce
  • 20 nos Spring roll wrapper
  • Salt (to taste)
  • 1/2 tsp White pepper
  • 1 tsp Cornflour - mixed with 2tsps water
  • Sunflower oil (to fry)

Step 1

Heat oil over high heat in a wok and stir-fry all the vegetables (except for green onion and beansprouts) till soft and half cooked

Step 2

Add RasaMusu, dark soy sauce, salt, pepper and mix

Step 3

Add beansprouts and finely chopped green onion

Step 4

Add sesame oil, mix and sauté

Step 5

Spread the spring roll wrapper with one corner towards you; place a teaspoon of the filling from the corner towards the middle

Step 6

Roll the pastry tightly over the mixture till half-way up the pastry - then fold in the sides and continue rolling till the end

Step 7

At the end, place a dab of corn-starch water and seal

Step 8

Deep fry till golden brown

Step 9

Serve with sweet chilli sauce
