Potato, leek and cheese gratin

  • 1kg potato (peeled and cut to 2mm thick slices)
  • 250g leeks white part (sliced)
  • 100g onion (sliced)
  • 20g garlic (chopped)
  • Sprig of thyme
  • 250ml Maggi chicken stock (1 cube)
  • 100ml thick Maggi coconut milk
  • 200ml fresh milk
  • 1tsp nutmeg
  • 150g mozzarella cheese
  • 20g butter

Step 1

Pre-heat oven to 180°c

Step 2

Parboil the potato slices till it is cooked on the outside but slightly crunchy on the inside

Step 3

In a saucepan saute leeks, onion, garlic and thyme with butter till leeks and onion are soft

Step 4

Add potato, nutmeg, stock and simmer; season with salt and pepper

Step 5

Add coconut milk and fresh milk; bring to simmer and remove from heat

Step 6

Pour into a earthenware or glass oven dish; sprinkle cheese liberally over the mix; cover with aluminium foil

Step 7

Bake in oven at 180°c for 20minutes; remove foil and bake for a further 10 minutes under 200°c till cheese becomes golden

Step 8

Remove from oven, and garnish with fresh thyme
