Pre-heat oven to 180°c
Parboil the potato slices till it is cooked on the outside but slightly crunchy on the inside
In a saucepan saute leeks, onion, garlic and thyme with butter till leeks and onion are soft
Add potato, nutmeg, stock and simmer; season with salt and pepper
Add coconut milk and fresh milk; bring to simmer and remove from heat
Pour into a earthenware or glass oven dish; sprinkle cheese liberally over the mix; cover with aluminium foil
Bake in oven at 180°c for 20minutes; remove foil and bake for a further 10 minutes under 200°c till cheese becomes golden
Remove from oven, and garnish with fresh thyme
