Milk Rice

  • 2 cups Heirloom Rice
  • 3.5 cups MAGGI Real Coconut Milk - Thin
  • 1 cup MAGGI Real Coconut Milk - Thick
  • 1 piece Mace
  • 1 pod Cardamom
  • 2 inch Pandan leaf
  • Salt (to taste)

Step 1

Wash and drain the rice

Step 2

If using a rice cooker, add all the ingredients into the cooker and cook

Step 3

If using a conventional cooker, place all the ingredients with the thin coconut milk in a pot, and place the pot on a stove over medium heat with the lid off

Step 4

Once the liquid has reduced to the level of the rice and holes in the rice are visible, add the thick coconut milk, reduce heat to low and cover the pot with the lid; cook for 10 min (check seasoning)

Step 5

Stir the rice with a chopstick or fork - the rice should be thick and creamy but the grains must be whole

Step 6

If not thick and creamy add 1/4 cup coconut milk and keep covered on lot heat for another 10 minutes

Step 7

Remove from heat and spread on a flat dish using a spatula or a banana leaf

Step 8

Leave it to cool and cut into squares, diamonds or any shape you wish to

Step 9

Serve warm
