Mini Fish Bun

  • Serves : 6

  • Bread Roll Dough (Bun Dough):
  • 500g/4 cups all-purpose flour
  • 2 teaspoons/6.30 g instant yeast
  • 1 cup / 240ml of whole milk (room temperature)
  • ½ cup/ 120ml of warm water
  • 30 g/ 2 Tablespoons unsalted butter (room temperature)
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • Egg Wash – one large egg yolk and 1/2 teaspoon water/ milk
  • Fish Filling:
  • 1 can (425g) of Mackerel or 3 cans of tuna in brine crumbled
  • 2 medium / about 275g boiled potatoes (mashed with a fork)
  • 1 medium/ 100g red onion finely chopped
  • 2 cloves garlic minced
  • 1′ inch ginger minced
  • 2 green chilies sliced (optional)
  • 4-5 fresh curry leaves chopped
  • 1 Tablespoon vegetable oil
  • 1/2 teaspoon turmeric
  • 1 1/2 teaspoons ground black pepper
  • 1 1/ 2 teaspoon red chili powder
  • 1/2 teaspoon salt (according to your taste)

For the filling:

Heat the oil. add curry leaves, garlic, ginger, onions, green chillies and stir well.

Step 3

Add mackerel or tuna, potatoes, turmeric, chilli powder, pepper, Maggi seasoning cube, mix well and set aside.

Step 4

The dough:

Combine sugar, instant yeast & water. Mix well and set aside.

Step 6

Combine all purpose flour, salt, mix well.

Step 7

Make a hole & add the yeast mixture and mix

Step 8

Add the milk and knead until a non-sticky ball forms.

Step 9

Cover and allow to rise for 30 minutes

Step 10

Divide dough into equal small sizes and allow to rise for 10 minutes

Step 11

Flatten dough ball to a disk shape

Step 12

Place a scope of filling mixture and fold into triangular shape.

Step 13

Place on greased tray & brush with egg yolk

Step 14

Bake at 180°C for 20 minutes or until golden brown.
