Pan seared chicken with mushroom & green peppercorn sauce

  • 50ml oil
  • 10g butter
  • 1 chicken breast (boneless)
  • 50g onion
  • 20g chopped garlic
  • 2 cloves garlic (whole)
  • 1 sprig thyme
  • 100g mushrooms (sliced)
  • 1 sprig peppercorn
  • 1 cube Maggi chicken stock
  • 100g green beans (cleaned and de-stemmed)
  • 25ml milk
  • 50ml thick coconut milk
  • 1 red chilli

Step 1

Heat 25ml oil in a frying pan over medium heat and pan sear the chicken on both sides till golden brown; add butter, thyme and garlic cloves – baste the chicken with the melted butter.

Step 2

Season with salt and pepper and remove from heat to rest

Step 3

In the same pan saute onion, garlic, mushroom, peppercorn; season with Maggi stock cube, salt and pepper

Step 4

Once brown, pour coconut milk and fresh milk, simmer for 2 minutes and remove from heat

Step 5

In a clean pan, heat the remaining oil and saute garlic and red chilli; saute the beans till cooked and season with salt

Step 6

Place the beans in a dish with the chicken on top and serve with the mushroom sauce

Step 7

Garnish with red chilli and green peppercorns
