Pasta Salad

  • 1-pound uncooked pasta – spiral works better
  • 3 cups tomatoes, diced
  • 100 g mozzarella, diced
  • 200g.sausage, sliced
  • 3/4 cup olives, sliced (optional)
  • 1/2 cup sliced red onion
  • 1/2 cup fresh parsley, chopped
  • For dressing*
  • Olive oil
  • Vinegar
  • 2 tps cooked minced garlic or 1tsp garlic powder
  • Salt and pepper
  • Dry or fresh basil and dry oregano (optional)
  • Maggi chicken cube

Step 1

Cook pasta according to package directions, in salted water for more flavor. Allow to cool slightly and toss with a little oil to prevent sticking.

Step 2

Whisk the dressing in a bowl until an emulsion is formed

Step 3

Toss all ingredients together.
