Method
Step 1
Cook the noodles according to packet instructions but reduce cooking time by 1 minute to maintain slight firmness. Drain thoroughly and set aside, preventing overcooking during the final stir-fry process.
Step 2
In a small bowl, mix together 1 packet of Maggi curry seasoning, soy sauce, and chilli flakes until well combined. This sauce mixture will coat the noodles evenly and provide consistent seasoning throughout.
Step 3
Heat a large wok or heavy-bottomed pan over high heat and add 1 teaspoon oil. Add sliced onions and cook until they start to caramelize and turn golden brown, then add minced garlic and cook until fragrant, about 30 seconds.
Step 4
Add the prepared seafood to the pan and toss continuously until cuttlefish becomes tender and prawns turn pink and opaque, approximately 2-3 minutes. Remove seafood mixture and set aside to prevent overcooking.
Step 5
Add remaining teaspoon of oil to the same pan. Add julienned beans and carrots, stir-frying until vegetables are crisp-tender, about 2 minutes. Push vegetables to one side, add beaten eggs, and scramble until just set. Add cooked noodles and prepared soy sauce mixture, tossing everything together until well combined and heated through.
Step 6
Return the cooked seafood to the pan, toss briefly to reheat, and top with freshly sliced spring onions for color and fresh flavor before serving immediately.
